White bean & Chicken Chili

White bean & Chicken Chili

One thing about being pregnant is that you are constantly struggling to get enough iron, and there are so many restrictions on what you can and can't eat.  Because of these restrictions, as well as an aversion to meat while pregnant, I virtually stopped eating meat.  I didn't want to take iron supplements and I sorely needed some protein.  This recipe that I got from a can of beans, with a few alterations, was really delicious.








Here's the recipe per Bush's Best, but with some tweaks:

Time to Table: Prep: 10 Minutes | Cook: 20 Minutes | Total: 30 Minutes



Ingredients:
  • 1 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 1 (4 ounce) can chopped green chiles, drained
  • 3 tablespoons all-purpose flour
  • 2 teaspoons ground cumin
  • 2 (16 ounce) cans BUSH’S® Great Northern Beans (I added a can of cannellini beans*) 
  • 1 (14.5 ounce) can chicken broth
  • 1 1/2 cups finely chopped cooked chicken breast
  • Shredded Monterey Jack cheese (optional)
  • Sour cream (optional)(I used 1 mashed avocado instead)
  • Salsa (optional)
  • Organic yellow potatoes, mashed (optional)**


*Because I added extra beans, I added a little bit extra of everything else (I usually don't measure things).
**I like mashed potatoes with my chili, on the side, underneath, or on top. :D



Directions:
  1. In large skillet, cook onion in oil for 4 minutes or until transparent. 
  2. Add chiles, flour and cumin; cook and stir for 2 minutes. 
  3. Add beans and chicken broth; bring to a boil. 
  4. Reduce heat; simmer for 10 minutes or until thickened. Add chicken; cook until hot.
  5. Garnish with cheese, sour cream and salsa, if desired.



Another big difference between what I made and what the recipe calls for, is that I chose to buy/use as much organic, non-gmo as I could while making this recipe.  I also measured very little of the things I put in the chili.  I really prefer to taste test the amount of something I put into a recipe, or "eyeball it".

Because I live alone and I am on a budget, I really enjoy making this recipe and then portioning it out into single serve containers to heat up later on.  I made this in the weeks prior to having my newest baby.
