French Toast à la Yogurt & Strawberries
So, French toast is one of my all time favorite breakfast meals. However, I am not a huge fan of syrup. I was staying at my mother's for a few days and (like me) she keeps very little in her fridge, so I had to get creative with my breakfast. Fortunately, she had just enough of everything to make this great take on a classic breakfast time favorite.
Ingredients:
2-3 Slices of 100% stoneground whole wheat bread
1 egg
1/4 cup milk
4-5 Sliced strawberries
1/2 cup Stonyfield vanilla yogurt
1/2 teaspoon ground cinnamon
Directions:
- Crack egg in bowl with milk. Whip till bubbly.
- Dip bread slices in egg mixture and put in buttered frying pan.
- Dump remaining egg mixture on bread.
- When both sides are cooked to golden brown and a bit crispy, remove french toast from pan
- Lay out on plate to cool for 2-3 minutes.
- Spread yogurt all over top of french toast.
- Spread sliced strawberries on yogurt, on toast.
- Sprinkle on cinnamon and enjoy!
This is very simple to make with little room for error and lots of possible variation in ingredients. I try to always use organic, no-gmo, no growth hormones, no antibiotics, cage-free, etc., where possible, but if you're just grabbing whats left in the house, you make do with what you have.
It taste great with blueberries on a peanut butter and (very ripe) banana spread, as well!
